The Grapefruit diet. Recipes for success!

LUNCH
VEGETABLE PIZZA
These lunch selections are perfect for a quickly prepared meal in the middle
of a busy day or for something easy to take with you to work.
Who says pizza has to be bad for you? Feel free to add anything you like...
there's no additional charge for toppings.
1 large pizza crust (such as Boboli)
1/2 cup grated skim mozzarella cheese
1/2 cup grated Fontina cheese
1/2 cup sliced canned artichoke bottoms
1 cup sliced zucchini
1 cup sliced red onion
1 tablespoon grated Parmesan cheese
1 teaspoon chopped fresh oregano or 1/2 teaspoon dried
Preheat oven to 425 F. Arrange the ingredients on the pizza crust in the
order listed. Bake for 20 minutes, or until done.
